The second system used to remove alcohol is evaporation in rotating cone columns, which centrifuge the wine, creating very fine layers of liquid. At the same time, a very cold vapor runs through the axis cone to which the cones are anchored and displaces the volatile substances, dividing the wine into three parts, eliminating the ethanol and uniting the parts again.

In Spain, this wine began to be marketed four years ago and is regulated by the Council of Non-Alcoholized Wine Producers of Spain (CONVIDES) and must be made with the best quality wines, from which the alcohol is extracted by non-aggressive methods., until obtaining an alcohol volume of 0.9% or less.
