Origin and Use

Non-alcoholic wine is a relatively modern product and is made in two ways, by dealcoholizing the wine or with a mixture of grape juice and non-alcoholic must. In this guide to buying the best non-alcoholic wine, we want to tell you a little about its history, the mixtures and the properties of these wines.

As long as wine has existed, there have been alcohol-free wines. Normally, they have been called “Mostos” and they are sweet grape juices, made by directly squeezing the grapes. It is an aromatic and sweet liquid that contains all the parts of the grape, as well as its sugars, since they have not been converted into alcohol. In summary, the must is the initial stage of the wine, if it is allowed to ferment, the sugar ferments and the alcohol appears.

Non-alcoholic wine as such, the one that goes through a complete dealcoholization process, has its origin in the first decade of our century in France, when some wineries considered the production of a wine that complied with modern social demands, free of alcohol. and made with organic and natural products.

The correct name of these wines is “dealcoholized wine”, since they are wines made following the traditional method and from which the alcohol is removed by different methods.

One of these methods is organoleptic molecular deconstruction, which involves separating the components of the wine, which are poured into separate containers, where the ethanol, which is responsible for the alcohol, is eliminated. Once free, the components are reattached. The problem with this method is that, along the way, aromas and natural characteristics of the broth are lost, so the end result is a less tasty wine.

The second system used to remove alcohol is evaporation in rotating cone columns, which centrifuge the wine, creating very fine layers of liquid. At the same time, a very cold vapor runs through the axis cone to which the cones are anchored and displaces the volatile substances, dividing the wine into three parts, eliminating the ethanol and uniting the parts again.

In Spain, this wine began to be marketed four years ago and is regulated by the Council of Non-Alcoholized Wine Producers of Spain (CONVIDES) and must be made with the best quality wines, from which the alcohol is extracted by non-aggressive methods., until obtaining an alcohol volume of 0.9% or less.

We continue with this comparison of non-alcoholic wines, reviewing the combinations and mixtures that we can make with them. Being alcohol-free drinks, the resulting cocktails will be very fresh, ideal for summer.

First of all, we will start with a Pisco Sour Sin, a cocktail with non-alcoholic white wine, sugar, lemon juice, a slice of ginger, angostura, an egg white and four ice cubes.

La Espadaña is a very Spanish cocktail, for which you will need non-alcoholic red wine, lemon juice, brown sugar, a cinnamon stick, several small pieces of fresh orange and a lot of ice. This combo is perfect for evenings, especially after dinner.

If you like to experiment, non-alcoholic white wines can substitute for rum in mojitos. This cocktail is made following the traditional recipe with lime, sugar, mint and soda. If you use sparkling wine, you won’t even need to add soda.

Wine is a natural product that is greatly affected by oxygen, temperature and light. This is because, once opened, when the broth comes into contact with the air, an oxidation process takes place, which affects the taste, texture and aroma of the wine.

At the time of sale, the wine is at its optimum point of maturation. This means that it should be consumed immediately, even the cheapest wine lasts a year or two as long as it is well preserved.

A closed bottle should be stored horizontally, so that the cork is always moist. You must look for a dry place that has a permanent temperature, since sudden variations in temperature will harm its flavor. It should also be in a stable place, without vibrations and away from direct sunlight. In this form, it can last up to two years.

If the bottle is open, it should be kept closed, either with its original cap or with a purchased cap, so that air does not enter. It should be kept upright and in the fridge and, above all, it should be consumed within a week.
