- 4 egg yolks

Apple pie with puff pastry is a nutritious and healthy dessert, as it provides quality protein and has no added fat; so the caloric level is moderate and can be part of any diet.
To start the preparation of this rich dessert, start by preparing the pastry cream. Put the milk in a saucepan over medium high heat along with the vanilla seeds (you can also use vanilla essence). Once it starts to boil, remove it from the heat.
Find a deep bowl and place the egg yolks, cornstarch, sugar and beat everything with a whisk. Initially you will see that it is a mixture with a dry consistency, but when beating vigorously it becomes creamy until it shows a homogeneous appearance. Next, slowly pour in the infused milk and stir until integrated with the other ingredients.
Use the saucepan where the milk was boiled and pour the entire mixture there. Bring it to a simmer and stir constantly so it doesn’t stick as its consistency increases. You’ll know it’s ready when the stick leaves marks on its surface.
Now place the pastry cream in a bowl and cover it with plastic wrap so that no air enters. Reserve while you continue with the rest of the recipe.
Place the convection oven at 220ºC and then prepare the base of the cake. For the puff pastry base you have two options, you can prepare it yourself or buy the sheet ready to be used.
Use a rectangular and shallow mold, cover it with baking paper and place the puff pastry on top; taking care to fit it well to the mold and folding in the peaks that protrude from the corners. Then, bake the puff pastry for 15 minutes and remove.
Proceed to cut the apples into thin slices. Continue now and spread the pastry cream on the puff pastry base, which must be toasted and then place the apple slices to your liking. Proceed to bake the cake at 230ºC for 20 minutes.
Remove the tart and brush it with peach jam. To do this, it is recommended to microwave a little jam in order to dilute it and using a kitchen brush, pass it over the apple slices. The coverage of apples with a shiny finish make this recipe a dish that everyone likes equally.
