Ingredients: 

  • 4 artichokes 
  • 1 onion
  • 1 clove garlic
  • 50 g of Iberian ham in cubes
  • Olive oil
  • 15ml white wine
  • 15 ml of artichoke broth
  • Salt to taste 

Artichokes are highly appreciated in the Mediterranean, not only for their intense flavor, but also for the benefits they bring to health. In Spain, they are consumed throughout the year, but there are two specific seasons, one is in autumn and the other is in spring. If the classic cooked artichokes seem delicious to you, then you are going to love the combination of cooking with a touch of grilling, which we present to you in this easy recipe to prepare artichokes with ham.

The first thing is to wash the artichokes well and remove all the green leaves, until only the tender ones in the center remain. Then, you must remove the upper part to leave only the lightest part of the fruit, in addition, it is necessary to chop them into 4 parts and check the heart, to remove some fibers that are usually inside. Also, it is possible to cook artichokes with the tail, but you must peel it well, otherwise, it is better to cut and discard.

A very important trick is to quickly place the chopped artichokes in water with lemon juice and a few sprigs of parsley, this prevents them from browning too quickly. To cook them, all you need is an induction, ceramic or gas hob, a pot, olive oil, water and salt to taste.

You have to place the chopped artichokes in a pot with the very hot oil and add only a little water, since the artichokes themselves have a lot of liquid. It is time to place a lid on the pot to facilitate cooking. If the water dries up, you should add a little more, but gradually until the artichokes are ready. Remember to save some broth for the end of this recipe. 

Once you have the artichokes cooked, all that remains is to chop the garlic and onion into small pieces, placing them with olive oil over low heat in a pan until they soften. Next, you need to add the artichokes and cook until everything is golden brown. This is the best time to add the ham in small pieces, letting it cook for a few minutes, until it acquires the texture of York ham.

The special touch will be given by the white wine together with the artichoke broth. It’s time to turn up the heat so that the preparation reaches the boiling point. Before adding salt to taste, it is good to test if it is really necessary, remember that the ham usually has a lot of salt.
