How to make baked cauliflower

  • 1 medium or large cauliflower
  • 4 eggs
  • 200 ml of milk
  • 200 g of mozzarella cheese
  • 1 tbsp. oregano
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • 1 tbsp. dried tomato
  • 1 tsp. basil
  • Salt and pepper to taste


Filling Ingredients: 

  • York ham and bacon bits (optional)


Other ingredients: 

  • drops of lemon or vinegar

Cauliflower is a food rich in vitamin C, several B vitamins, potassium and phosphorus. It also represents an important source of energy to recover strength after an intense exercise routine or physical work.

It should be noted that cooking cauliflower is not difficult. However, many people, especially children, reject the idea of ​​eating this vegetable because of the particular smell it gives off when it is cooking. 

But, in this recipe we are going to teach you how to prepare cauliflower and turn it into an irresistible dish for the whole family, ideal as a garnish for steamed chicken or fish. You just need to have an electric or gas  oven at hand.

Step by Step

  1. The first thing you should do is place a large pot of water and salt on the stove to bring it to a boil.
  2. You should cut the cauliflower into florets, and the very large ones can be cut in half.
  3. Now, it is recommended to wash the vegetable well to remove any residue or dirt. 
  4. After rinsing the cauliflower, and when the water is already boiling, you can place the florets in the pot. At this time you can add a splash of vinegar or a few drops of lemon to the water to counteract the characteristic smell of this food. The recommended cooking time for cauliflower in this recipe is 10 minutes. Therefore, you must cover the pot and be aware of the time, because we do not want the cauliflower to soften too much. 
  5. In the meantime, you can preheat the oven to 250°C with top and bottom heat.
  6. After turning on the oven, in a container, beat the eggs (it is advisable to break them separately in a small bowl to verify that they are in good condition), the whole milk and the spices. At this point you can combine the spices that you like the most, and if it is only for adults you can also add hot paprika or a few drops of hot sauce. Mix all the ingredients well and add half of the grated cheese, plus salt and pepper to taste.
  7. Now it’s time to drain the cauliflower florets and place them on an ovenproof tray, to pour all the mixture of milk, egg and spices.
  8. If you wish, you can place pieces of ham and bacon on top of the cauliflower.
  9. Add the remaining cheese and sprinkle a little more oregano over the cauliflower.
  10. You must lower the temperature of the oven to 200 g and insert the tray for 15 minutes.

After this time, remove the preparation and serve it to enjoy it at lunch with meat, chicken or another companion. The versatility of this recipe is that you can make it ahead of time and freeze it, saving you time when you need a quick and delicious lunch.
