Oven roasted pork loin

Ingredients: 

  • 1 kg of pork tenderloin
  • 5 potatoes
  • 5 tablespoons of honey
  • 5 tablespoons of mustard
  • 6 tablespoons of extra virgin olive oil
  • 2 onions
  • 1 tablespoon cornstarch
  • dried thyme
  • 1/2 glass of white wine
  • Salt to taste

Among the pork tenderloin recipes, this is one of the easiest, since most of the work is done by the oven. In addition, it has very few ingredients, so it is also an affordable dish. However, it is advisable to start the process the night before.

First of all, we must prepare the marinade, so we must use a kitchen bag with an airtight seal, where we are going to place the honey, olive oil, mustard, a little dried thyme and salt to taste, for later mix everything very well. Then, you have to add the pork loin, close the bag and massage from the surface so that the meat is well impregnated. This preparation must go to the refrigerator for 8 hours. You can make this first part of the recipe in the morning if you want to eat the pork tenderloin for dinner. If you don’t have an airtight bag, you can use a bowl with a lid.

For the garnish, the first thing is to turn on the oven so that it preheats to a temperature of 180 °C. Then, you have to peel the potatoes well and cut them into slices, while the onions go into strips. It is important to select a container suitable for the oven, and place these vegetables with a tablespoon of olive oil, 1/2 glass of white wine and a little salt. This should go in the oven for a period of 45 minutes with top and bottom heat.

Once the potatoes and onions are well cooked, it is time to take the pork loin out of the fridge to take it to the oven. The marinade mixture will be used to make a sauce later. However, for the pork to remain juicy, it is advisable to seal the meat before taking it to the oven. For this, you just have to grease a pan, place the stove over medium heat and cook 5 minutes on one side and 5 minutes on the other. 

Next, we can use the potatoes and onions as a bed to place the pork loin on top and bake for a period of 25 or 30 minutes with heat from above and below. Let’s remember that convection ovens have a fan, so if you have an appliance with this technology, we recommend turning this function on for more uniform cooking.

While the loin is cooking, we can place the marinade mixture in a pot and cook over low heat. When it is very hot, we can add the corn starch dissolved in a little water, to continue stirring until the sauce is thicker. At that time, we must turn off the kitchen.

Before serving the roast pork loin, let it rest for at least 10 minutes to make it easier to slice. For this, we have to use a very sharp knife. The thickness of each piece will depend on your tastes.

Finally, you can place a bed of potatoes on the plate with two slices of this juicy baked pork loin and decorate with the marinade sauce.
