Oven Roasted Butternut Squash Recipe

  • 1 medium or large pumpkin (preferably violin type)
  • 1 teaspoon ground cumin
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon of turmeric
  • ½ teaspoon ground ginger
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground cloves
  • 1 teaspoon sweet paprika
  • 1 teaspoon salt
  • 1 handful of aromatic herbs or spices (finely chopped)

Cooking pumpkin is one of the best options when you are looking for a nutritious, healthy, simple and calorie-free dish. Among the easiest recipes to prepare we have: roast pumpkin in the oven; a dish in which some herbs and spices are incorporated that add an exquisite flavor and aroma. In addition, it is a preparation with a very little amount of oil; so you can enjoy it without fear of gaining weight.

To begin the preparation, you must first wash and cut the pumpkin in half. Remove all its seeds with the help of a spoon and then proceed to chop each half into 4 longitudinal parts. The idea is to get approximately eight portions of the same size; although you can also chop it into medium or large pieces if you wish.

Preheat the electric oven to 200ºC. The squash skin does not need to be removed at this time; since once it has been roasted, it can be removed more easily. If you prefer, you can leave it and eat it together with the pulp, as it will be too soft to eat.

Next, use a bowl to mix the rest of the ingredients: extra virgin olive oil, salt, cumin, turmeric, ginger, pepper, ground cloves, sweet pepper and all the other spices and aromatic herbs that you want to add to the preparation, so that when cooking the pumpkin all the flavor is enhanced.

Now, you can place the pieces on a tray and cover them with all the prepared mixture that you have ready in the bowl; for which you can use a kitchen brush that facilitates the task of distributing all the spices evenly.

Pumpkin cooking time is 30 min. Although it can be more or less, so it is advisable to check its condition by pricking its center with a toothpick. Once it’s ready, serve the squash with chicken or another protein.
