How to make zucchini spaghetti

  • 2 courgettes

  •  5 tomatoes
  • 3 garlic cloves
  • 1 onion
  • 1 teaspoon ground black pepper

To carry out this step, you will need a spiralizer to make the raw zucchini spaghetti, as it will make the cutting process much easier.

Start by washing the zucchini to remove any dirt or debris, then pat dry with kitchen paper to remove any excess moisture. Once ready, place it on the board and cut the rounded end opposite the stem, so you can hold the piece more firmly.

Insert the cut end through the spiralizer inlet and turn the zucchini as if it were a pencil sharpener, until you see the spaghetti-shaped vegetable come out of the equipment opening. Cut the amount that you consider enough to eat and store the rest of the zucchini in the fridge so that it is better preserved.

Making zucchini spaghetti can be to the taste of each diner, but at this point the vegetable is still raw, so it has to be cooked.

How to cook zucchini spaghetti is also something that can be adapted to the preferences of each one, since it is possible to boil, steam or sauté them.

In this case, we will put a frying pan over medium heat, with a splash of extra virgin olive oil, and when it is hot, we will drop the zucchini spaghetti here with a little pepper to stir for 2 minutes and they will be left.

The most recommended thing to enjoy these spaghetti is to have the tomato sauce previously made, just to heat it in a microwave oven and serve, but if this is not your case, you will have to boil approximately 5 tomatoes from which you have removed the seeds..

While they are cooking, chop the onion into small pieces and crush the garlic to extract its juices. Put a frying pan over medium heat with a little extra virgin olive oil and the dressings, stirring gently.

Going back to the tomatoes, when you notice the outer skin starting to wrinkle, turn off the heat and let them sit until they come to room temperature. Then blend them with a little water and pour them into the pan where you are cooking the dressings along with a little salt and pepper.

Once everything is in the pan, all that remains is to stir gently with a wooden spoon so that the sauce is incorporated with the dressing and wait for it to cook for approximately 5 minutes.

Serving

To finish, simply serve your zucchini spaghetti bathed in the homemade tomato sauce and, if you want an additional touch; sprinkle some parmesan cheese on top and bon appetit!
