Ingredients: 

  • 1 chicken breast
  • 1 ½ cup mushrooms

 

Filling Ingredients:

  • 2 cloves of garlic
  • ½ green bell pepper
  • ½ red bell pepper
  • ½ yellow bell pepper
  • 1 medium zucchini
  • 1 onion
  • 1 large carrot

 

Other ingredients: 

  • Olive oil
  • White wine
  • bean sprouts
  • Salt and pepper
  • Dried herbs, ginger powder, soy sauce

To start this preparation, it is recommended to wash all the vegetables well and cut them to more or less the same size, except for the garlic and onion, which can be cut into thin slices.

In a large skillet add two tablespoons of olive oil and when it starts to heat up, you can add the garlic and onion. These ingredients should be stirred until the onion is transparent and the garlic has released all its flavor.

Now it’s time to add the vegetables. We start with the carrots and peppers, letting them mix well in the preparation and the carrots soften.

When the vegetables are at the desired point, add the zucchini and mushrooms.

Remove again to place the chicken breast in strips or cut into cubes. At this stage you can already season the preparation, also using some spices such as rosemary, cumin, oregano or those of your preference. 

Let the chicken cook and when the meat is browned, you can finish by adding the bean sprouts and a splash of white wine, to enhance the flavor of the sautéed chicken with vegetables. You can also add a little soy sauce at the end and let the preparation reduce. In a few minutes you can turn off the heat and serve this delicious, varied and well-nutritious meal.

An alternative to make this recipe can be more oriental style, letting the chicken cubes marinate for several hours with soy sauce and at the end of the preparation add a pinch of ginger powder, decorating with sesame seeds when serving.

On the other hand, we must emphasize that this type of chicken with vegetables recipes are very easy to make, at the same time that they can be adapted. That is, you can add the ingredients that you like the most, such as spinach, eggplant, cauliflower or broccoli.

In case of adding the last two to the preparation of the chicken, remember that you must steam them beforehand.

In addition, its preparation is not at all demanding, in terms of utensils and fires. Therefore, you can use an electric stove, induction plate or gas stove, since you will only need a wide frying pan to add all the vegetables that the family likes. 

To conclude, we highlight that the versatility of this recipe adapts to accompany salads in a light dinner, prepare a sandwich for lunch at work or some burritos with Mexican tortillas to share on a walk to the park with the family, so do not worry think about it more and in less than half an hour you will have this delicious meal ready.
