Eating fish during Lent is a tradition that many Spanish families still maintain. In this sense, cod is one of the alternatives in the most famous recipes, since it has become an emblematic dish during Holy Week and its forms of preparation are so varied that they could satisfy all kinds of tastes.

1. Battered cod

- 500 grams of cod meat
- 100 grams of wheat flour
- 50 milliliters of beer
- 1 teaspoon of yeast
- 1 clove garlic
- Olive oil
- Parsley
- Salt
Preparation
Start by taking a clean bowl and pour the yeast, the beaten egg, the beer and half of the wheat flour into it. Mix until a homogeneous consistency is formed and then add the chopped parsley and garlic clove, to finish thickening everything with the remaining flour.
Now take the cod fillets and add salt to taste on both sides, while you put the pan with enough olive oil over medium heat. When it reaches the desired temperature, dip the fish in the batter mixture and carefully set it aside to cook. Wait until it is golden on both sides and everything is ready to eat.
2. Gold cod

Ingredients
- 250 grams of cod crumbs
- 250 grams of onion
- 150 grams of potato
- 30 grams of liquid cream
- 4 eggs
- pitted black olives
- Olive oil
- Parsley
- Salt
Preparation
Take the onion and chop it into julienne strips to cook over medium heat in the pan with olive oil. When they are cooked, add the cod crumbs and mix to incorporate. Lower the intensity of the fire and put a lid, to take advantage of the steam; Meanwhile, mix the cream and the egg in a bowl. When it has reached homogeneity, add the mixture to the pan with salt and pepper to taste. Mix gently until the egg is cooked and turn off the heat. Finish by decorating the plate with parsley to taste and also adding the olives.
3. Baked cod
Among the easy cod recipes, we find this baked cod alternative with very flavorful ingredients:
Ingredients
- 450 grams of desalted cod
- 4 cloves of garlic
- 2 cayenne peppers
- 1 onion
- 1 red bell pepper
- 1 bay leaf
- Olive oil
- ground black pepper
- Salt
Preparation
The first thing you should do is preheat the electric oven to 180°. Cut all the vegetables into julienne strips, add salt to taste and combine with the olive oil in a tempered glass dish, to take it to the oven until cooked for 20 minutes, stirring every 10 minutes. Then place the cod fillets with more olive oil on top of the vegetables and return to the oven for another 20 minutes or so.
In a separate pan, put olive oil with cloves of garlic chopped into slices next to the chillies, cooking everything until toasted, this will serve to bathe the fish when you go to serve it.
4. Cod with pil-pil sauce

- 300 grams of desalted cod
- 3 garlic cloves
- 1 liter of olive oil
Preparation
The pil pil is prepared a day in advance, placing the chopped garlic cloves in a frying pan with the olive oil until they begin to brown and wait to turn off the heat.
The next day, clean the fish and put it in a clay pot to cook it skin side up with the flavored oil, after removing the garlic. When it starts to boil, turn off the heat and turn it back on 15 minutes later. Repeat the operation until the fish is cooked and, when releasing the whey, also take the opportunity to mix with the oil and create the sauce that will accompany the dish.
5. Cod in saffron sauce and prawns

- 250 grams of desalted cod
- 60 milliliters of crushed tomato
- 30 milliliters of white wine
- 8 prawns
- 2 cloves of garlic
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 1 leek
- 1 pinch of nutmeg
- Parsley
- Olive oil
- Saffron
- ground black pepper
- Salt
Preparation
In a frying pan add all the vegetable ingredients chopped into small pieces together with the nutmeg and the olive oil, to fry them. When they are taking color, add the wine together with the tomato to form the sauce where you will first cook the peeled prawns for approximately 5 minutes. Then you will integrate the cod cut into pieces. Reduce the heat to medium intensity and place a lid for 10 minutes to let the flavors meld. Finish by serving with a little chopped parsley.
