Crepes are one of those dishes, quick to prepare, that usually go well with breakfast, dinner and snacks. And, although they have traveled the world adapting to the gastronomic culture of each region, their original recipe comes from northwestern France, specifically Brittany.

Basically it consists of a very fine circular dough whose diameter will depend on the pan or crepe used for cooking. In addition, we can adapt the ingredients of the crepes based on our eating habits and incorporate sweet or savory fillings that are at our disposal and imagination.

Online we can find multiple procedures on how to make crepes. However, the one that we will develop below is one of the fastest and most practical proposals. It will serve you for approximately 10 servings and it is convenient for those days when we do not have much time, but we want to enjoy a good recipe.

Now, once the type of crepe we want to make has been defined and the portions of the ingredients have been measured, we proceed to incorporate them into a bowl and stir, either with a wire whisk or a hand blender, until we obtain a liquid mixture and homogeneous, since this is the characteristic that defines the dough of the crepes.

Once the preparation is ready, it is time to give it time so that, firstly, the air bubbles that form when beating are released and, secondly, both the starch and the proteins are hydrated. Effects that will allow the dough to take on the right consistency so that its cooking on the griddle is more uniform.

After the rest period of the dough (about 30 minutes), heat a previously buttered pan over medium heat. Then, with the help of a soup ladle, pour the mixture and tilt the pan in order to spread the dough completely on its bottom.

Let cook for two minutes and when the edges begin to peel off, turn it over so that it browns on the other side as well. The next thing is to remove it and continue the same procedure until the preparation is finished.

All that remains is to fill the pancakes. In this case we will use two usual and quick fillings, such as cheese and ham for a salty version or fruit accompanied by chocolate syrup for a sweeter dish. However, when it comes to fillings, the options are limitless.
