Crispy Fried Aubergines

  • 250 grams of flour
  • 1 cup of extra virgin olive oil

Originally from India, the eggplant provides us with antioxidants, proteins and flavonoids. However, it also offers small amounts of zinc, potassium, and phosphorous. For all this, it should be taken as part of a balanced diet. Plus, it’s a low-carb vegetable, so it can be a good choice if you’re trying to maintain your weight and looking for nutritious foods.

The ways in which this vegetable can be prepared are very diverse, but we have chosen a very simple eggplant recipe, so that you do not complicate yourself with too many ingredients and steps. In addition, the result can be used as a complement to other main dishes, adding a special flavor.

To prepare fried eggplant, start by cutting a ripe piece into thin slices, about 7mm to 1cm thick. Although, if you prefer, you could cut it into rectangles. Everything will depend on your preferences and the presentation you want to give to your dish.

Then, place the aubergines in a solution of salted water for 30 minutes. In this way, you can eliminate the bitter taste that they usually have. Completed the time, remove the slices and dry them very well. For this, you can help yourself with an absorbent cloth or kitchen paper towels.

Then, heat oil in a Tefal pan or any other brand of your choice. While it reaches the right temperature, pass each of the slices through a bowl of flour, until they are well covered on both sides. 

Finally, fry the slices until they reach the level of browning you prefer and serve the crispy aubergines with a little curry or with your favorite recipe.

Among other interesting facts about aubergines, we can mention that they are considered among the most recommended foods to contribute to heart health, since they help reduce inflammation rates that increase the risk of heart problems. Similarly, its anthocyanins are helpful when you want to keep blood pressure at optimal levels. Also, these substances are linked to the protection of brain cells, since they neutralize the damage caused by free radicals.

On the other hand, the aubergine is very rich in fiber, which helps reduce cholesterol levels, promotes healthy intestinal action and allows you to experience a feeling of satiety, without having to consume too much.

So, now you know, you don’t need to spend a lot of time in the kitchen to prepare a simple appetizer of aubergines or accompany your food with a healthy vegetable.
