Cooking salmon is really simple, but you have to pay attention to a few details to get a fish that is crispy on the outside but also juicy on the inside, since fish that is too dry can be unpleasant. For this reason, we must know that one of the most important characteristics is the cooking time, which must be adjusted to the thickness of the fillet or slice.
The first step is to heat the kitchen griddle over high heat and grease with a teaspoon of olive oil. It is important to note that if the griddle has a non-stick coating, then it is not necessary to use a lot of oil, in addition, it must be remembered that salmon contains its own fat. However, in some cases it is necessary to put a little more oil and wait until it is very hot, so that the fish does not stick.
While the griddle gets hot enough, you can proceed to dry the raw fish with kitchen paper. This is a very important trick to achieve a crispy result on the outside. Next, you have to season the salmon to taste, taking care to spread the salt and pepper around all the edges using your fingers. Also, it’s nice to add a few minced garlic cloves, but this is optional.
If you are using slices, first you have to seal both sides, in this sense, you can place them on the griddle and let them cook on high heat on one side for 2 minutes, to turn and cook the other side for the same amount of time. Then, you have to remove it and let it rest for 30 minutes, to take it back to the grill, but this time over medium heat, for a period of 2 minutes if you like the fish rare, however, in case you prefer it well done you should cook it for 5 minutes.
If you have thick steaks, you generally need to cook on high heat for 5 minutes on the skin side, and then turn them over to continue cooking for another 3 minutes. We must take into account that salmon cooks very quickly, so we must be careful not to dry it too much. Finally, you can add the lemon juice a minute before removing the fish and serving.
