Also, to add interest, this time we propose a recipe for cream of peas that you will have ready in a short time, with few ingredients and will be suitable for taking care of the figure, since it is low in calories.

If you do not have fresh peas, there is no excuse, it is also valid to make the frozen peas cream. This type of presentation is usually very easy to find in the supermarket throughout the year.

To start with the preparation, pour the two tablespoons of oil into a saucepan and allow them to heat over medium heat, so you can add the leek and cook it until it is slightly transparent. At this point, add the peas and stir a bit. To soften the peas without drying them out, add water to cover them.

Once you notice that the water has begun to boil, add the cubes of potatoes, so that they cook together with the peas. You must be attentive to verify that the potato is soft, to stop cooking and continue with the next step.

Next, remove the peas from the pan with a little of the broth. Reserve the rest of the liquid, since you can use it later to give the cream the desired consistency.

At this time, you have the option of using the mixer, a food processor or the blender, failing that. The idea is to make a smooth pea puree, processing the mixture until a homogeneous emulsion is achieved, in which the potato and leek are also integrated. One aspect that you should pay attention to is that the skin of the peas is completely crushed, to prevent traces of it from being perceived in the preparation.

Now, return the cream to the saucepan, add the salt and a pinch of pepper and turn the heat back on so that the cream cooks for a few more minutes; this will integrate the new flavors you added. 

We recommend you take advantage of this moment to check the texture and density level of the cream. If you notice that the cream is too thick, you can add a little more of the broth in which the peas have been cooked or water in small amounts.

Finally, serve and decorate with a sprig of parsley, a little sesame and, if you wish, an interesting white line of half cream.

This preparation can be great for dinner, since it is very light. Although it can also work as an appetizer for the main meal and complement the vegetable proteins of a healthy diet.
