Once you notice that the water has begun to boil, add the cubes of potatoes, so that they cook together with the peas. You must be attentive to verify that the potato is soft, to stop cooking and continue with the next step.
Next, remove the peas from the pan with a little of the broth. Reserve the rest of the liquid, since you can use it later to give the cream the desired consistency.
At this time, you have the option of using the mixer, a food processor or the blender, failing that. The idea is to make a smooth pea puree, processing the mixture until a homogeneous emulsion is achieved, in which the potato and leek are also integrated.
