Ingredients:

  • 6 carrots
  • 3 potatoes
  • 1 onion
  • 1 leek
  • 1 liter of water or vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 clove garlic

  • 1 tablet of concentrated broth
  • 100 milliliters of liquid cream
  • pepper to taste
  • Parsley

Although it is a low difficulty recipe, many of us are not sure how to make carrot cream correctly. For this reason, we have prepared a detailed step-by-step with tricks and recommendations so that you can achieve a delicious dish without too much effort.

To start, select a tall pot with enough capacity so that you can add all the ingredients. The first thing is to place the pot on the fire with a tablespoon of olive oil. While it heats up a little, we must peel and cut the onion into small pieces, to cook them for 5 minutes or until they are transparent.

Next, you must wash the leek well, removing the roots and green leaves, since we are not going to use them for this cream. You just have to cut it into slices and add it to the pot with the onion, to continue cooking for about 4 minutes, over medium-low heat and stirring so that the ingredients do not brown too much. At this point you can add salt to taste.

Besides, in a bowl, you must have the carrots peeled and cut into thin slices, in the same way, you have to have the skinless potatoes ready. One trick to make vegetables cook faster is to cut them into small pieces, which will also make them easier to chop. Ultimately, however, it will all go into the blender, so you don’t need to try too hard. 

It is time to incorporate the vegetables into the pot with the onion and leek, to cook them over medium-low heat for another 4 minutes. Later, you can add the vegetable broth and place the fire at high temperature until it begins to boil, however, once this happens you should lower the temperature for better cooking. Here you can optionally add the liquid cream, the concentrated stock cube and the pepper to taste. 

Carrot and potato take between 25 and 30 minutes to soften, so once this time has elapsed you have to prick the vegetables to see if they are tender. All that remains is to beat everything in the blender until you get the desired texture. It is possible to add a little more water if the mixture is too thick.

To decorate, you can place a little parsley or another aromatic green herb that contrasts with the orange color of the carrot. It is good to know that carrot and potato cream can be served hot or warm, making it a dish for any time of the year.
