Traditional breadcrumbs recipe

Ingredients: 

  • 500 gr of stale bread
  • A cup of water, 300 ml
  • 3 strips of fresh bacon or pancetta
  • 2 or 3 fresh sausages
  • 2 green peppers
  • 6 cloves of dried garlic
  • 100ml olive oil
  • Salt to taste

If you don’t know how to make breadcrumbs, the first thing you should do is prepare the bread. This must be stale bread that is about two or three days old and has a lot of crumbs. We will cut the bread into slices and put it in a food processor, until we achieve a good crumb. If you don’t have a processor, you can do it with a knife. 

Place the bread in a large bowl, to which we will add the water and salt, stirring a little so that it is distributed. Let it rest for about an hour.

While we wait, we will cut the ingredients. On one side, cut the chorizo ​​into thin slices and set aside. We do the same with the bacon, first removing the skin, and with the green peppers, clean of tips and seeds and cut into pieces or slices. Go reserving each ingredient separately.

Once the time is right to have everything ready, it’s time to start frying. The first thing we will fry is the chorizo, a basic ingredient in good crumbs with chorizo. It is not necessary to add oil, because its own fat is enough. The fat that remains in the pan can be discarded or reserved, if you want to give the crumbs more flavor.

Next, heat the oil in a frying pan and fry the bacon, adding a little salt. Stir it from time to time and leave it until it is golden. Once ready, remove it, keeping the oil in the pan.

In this same pan and oil we will fry the pepper and the garlic, with their skin. Once ready, we reserve the peppers, but leave the garlic.

It’s time to throw the crumbs. Regulate the induction hob to a low heat, as the process takes time. The secret of any recipe for migas de pastor is that they are golden and somewhat loose, although it all depends on the taste of the person. In general, you need 20 to 30 minutes for the dish to be ready. Stir when necessary.

The last step is to add the rest of the ingredients such as the chorizo, the bacon and the pepper. Mix everything together and cook for a couple more minutes. When serving, try to ensure that each portion has a little of everything.
