Squid with onions and cognac recipe

Ingredients:

  • 1 kg of baby squid
  • 2 large onions
  • 2 cloves of garlic
  • 1 splash of cognac
  • Olive oil
  • Chopped parsley
  • Salt to taste

Squid recipes are very common throughout Spain and other regions of the world, however, there is a wide variety of options, so this time we want to teach you how to prepare squid with onion, a very easy dish to make, but it has a unique aroma, a delicious flavor and a pleasant texture. In addition, it can be done on a butane gas stove, induction hob, ceramic hob or any other.

Baby squid are nothing more than small squid, so first of all we must clean them very well, as we do with any mollusk. In this case, you have to insert a finger inside to pull the tentacles, so that we can remove the entire internal part with a single movement. Then, you have to open the tentacles to remove the mouth, so that we can apply pressure with two fingers, just in the area where the interior joins the tentacles, to separate the two pieces. As for the fins, you also have to cut them.

To complete the cleaning, it is necessary to remove the feather, that is, the skin that remains inside the baby squid. Next, it is good to turn the squid, as if it were a sock, in order to clean the remains of sand that have remained inside. The last step in cleaning is to dry with absorbent kitchen paper, in order to remove excess moisture.

Once the squid are clean and dry, we can start the preparation. In this case, we only have to cut the onions and garlic cloves into julienne strips and slices respectively. Place these vegetables over low heat in a hot pot, with a splash of olive oil and salt to taste, until they take on a transparent color and a soft texture. This can take about 40 minutes, but it’s important to stir from time to time so the onion and garlic don’t stick to the bottom. If necessary, it is possible to add a few tablespoons of water during the process to prevent them from drying out.

On the other hand, while the vegetables are ready, we can take advantage of the time to brown the baby squid. It is important to note at this point that both the fins and the tentacles can be cut into small pieces and placed inside the baby squid. In this case, you just have to place a splash of olive oil in another pan and cook the squid until they change color. 

Next, it is time to transfer the squid to the pan where we have prepared the onion, stirring to mix all the ingredients. To give a special touch, you can add the splash of cognac and raise the heat so that the liquor evaporates a little. Finally, you have to lower the fire level to cook for a period of 20 minutes. You can chop parsley to place on top when serving the dish.
