Macaroni with tuna and tomato

Ingredients: 

  • 2 cans of canned tuna
  • 400 grams of macaroni
  • 1 onion
  • 800 gr of crushed tomato
  • olive oil and salt

  • 1 teaspoon of sugar 
  • Parmesan cheese to taste 
  • fresh basil leaves

This is one of the richest macaroni recipes, since it not only combines pasta with tuna, but also has a mixture of sweet and salty that is very pleasing to the palate. First, you have to peel the onion and chop it into very small pieces, and then sauté it in a pot over low heat, with olive oil and salt, until it takes on a golden hue and a soft texture.

To prepare the sauce, it is necessary to crush some tomatoes that are very ripe. If this is the case, you just have to place a pot with enough water on a high heat so that it reaches the boiling point quickly, so you can introduce the tomatoes for a short period, from 25 to 60 seconds, since the idea is that the skin of the tomato separates more easily from the pulp, but without cooking it. Later, we must place them in cold water and remove the skin with our hands. It is good to cut them in half and also remove the seeds.

Once this step is completed, it is time to introduce all the pieces in the blender to crush them. Now, to remove excess water, you can use an empty pot and strainer, letting the crushed tomato drain for a few minutes. At the end of this process, you just have to discard the water and pour the tomato into the pot to cook over low heat for 20 minutes; you will notice that it reduces its volume. On the other hand, if you do not want to go through this whole process or it is simply not the season for tomatoes, you can also buy canned tomato paste at the supermarket.

Once the tomato paste has reduced its volume, it is time to add it to the onion pieces. At this point it is good to mention that if the tomatoes are not fully ripe, the sauce can be a bit acidic, so it is convenient to add a teaspoon of sugar to balance the flavor.

Next, you have to drain the cans of tuna and crumble well to add it to the sauce. You can continue cooking for a period of 2 to 5 minutes and take advantage of this time to rectify the amount of salt if necessary. 

To repair the pasta, you just have to put enough water in a pot or food processor with a teaspoon of salt over high heat. When it is boiling, you can add the macaroni and cook for 5 to 10 minutes, as mentioned on the package. At the end, drain the pasta well and place it in a container to mix it with the sauce. When serving, you can add a little Parmesan cheese to each dish and decorate with some basil leaves.
