500 grams of beef tenderloin

1 piece of bacon

1 black pudding

4 veal shank bones

3 ham bones

250 grams of chickpeas

750 grams of water

7.5 grams of salt

2 chicken hindquarters

 2 sausages

4 large potatoes

4 carrots

2 cloves of garlic

extra virgin olive oil

Preparation

The day before you are going to cook, soak the chickpeas in water containing 1% salt and at least three times the weight of the legumes, to facilitate the process when you need to soften them.

Clean all the meats and bones that you are going to use in the recipe well, to prevent them from affecting the aesthetics of the food, as well as getting rid of impurities. Place the chicken, veal, bacon and ham in a large saucepan with water over the heat, until it boils.

Once cooked, transfer the pieces to a pressure cooker and add clean water along with the previously hydrated chickpeas and season with salt. Activate the equipment until it reaches a high pressure for approximately 10 minutes and then turn it off and let it cool.

On the other hand, you can advance the preparation of the vegetables, cutting them into pieces, and when the pressure cooker can be opened, include these elements together with the black pudding and chorizo. Turn the pressurized cook cycle back on for 5 minutes or until the deli meats are properly cooked.

When the process is complete, you must carefully remove each element from the remaining broth, and then strain it and remove any remaining food that may have remained. Pour it into a plastic container and refrigerate it, so that the upper layer of fat forms, which you must remove later.

When serving, combine all the ingredients in a saucepan and heat them to the boiling point, so they can bathe in the meat and chickpea broth.

 

2. Hummus with tahini sauce

400 grams of cooked chickpeas

1 large tablespoon of tahini

2 cloves of garlic

Preparation

You should cook the chickpeas if you have not used the canned ones in order to soften them enough. You can do this by boiling them for a couple of minutes until you can easily pierce them with a fork.

When they are ready, empty the contents into a colander that you have placed over a bowl, to catch the hot water. Wait for them to drain well and you can load the blender. 3. Chickpea Burgers

Ingredients:

150 grams of chickpeas

1 clove garlic

5 grams of chopped parsley

1 jet of olive oil

1 pinch of Paprika

1 pinch of salt

1 pinch of pepper

½ red bell pepper

½ white onion

½ Lemon

 

Preparation

Soak the chickpeas in water overnight and when you are ready to cook them, put them in a pot of boiling water for about 40 minutes or until they soften. When the chickpea can be easily crushed, it will be cooked. Now, put the boiled chickpeas in a food processor along with the salt, pepper and olive oil, to mix them until they reach a homogeneous texture.

Meanwhile, in a frying pan, begin to fry the pepper together with the garlic and onion in a little olive oil. When they are cooked, add salt and pepper to taste to season. Let everything sit until it reaches room temperature.

When the chickpea mixture and the dressing have cooled, proceed to mix everything in a large bowl, also integrating the lemon juice, paprika and chopped parsley with olive oil, to facilitate handling.

Make medium-sized balls with your hands and gently flatten them into patties, then place them on a plate and place them in the refrigerator to rest for at least 1 hour. This is to prevent them from breaking when cooking.

Now take a clean frying pan, pour a dash of olive oil to make it hot and put the burgers until they are sealed on both sides. When you check their consistency, they will be ready to serve.

Ingredients:

200 grams of cooked chickpeas

1 chicken breast

1 yellow bell pepper

1 spring onion

8 cherry tomatoes

fresh chives

1 handful of clean lamb’s lettuce

1 pinch of salt

1 pinch of pepper

1 splash of extra virgin olive oil

1 splash of lemon juice

 

Preparation

Start by chopping the onion and paprika into pieces, preferably julienne for easy eating. Saute them a little in olive oil in a large frying pan and when they are ready, take them out and cook the breast fillets now, seasoning to taste.

Once done, cut it into strips and add the vegetables again, turning the heat to medium. Add the chopped chives to the pan together with the tomatoes with a little lemon juice and sauté everything so that the flavors mix for a couple of minutes. When all the elements have come together, you can serve it to enjoy a delicious and different dinner.

 

5. Chickpea stew with chorizo ​​and bacon

The stew is, among the chickpea dishes, one of the most popular options to consume when it is cold. This chickpea meal is comforting, hot, and full of texture, so we encourage you to make it.

Ingredients:

250 grams of chickpeas

40 grams of sausage

60 grams of bacon

3 potatoes

1 onion 

2 tomatoes

60 grams of green onion

1 cup of white wine

1 teaspoon of oregano

2 cloves of garlic

1 pinch of salt

1 pinch of black pepper

1 tablespoon olive oil

 

Preparation

To save time, we advise you to chop all the vegetables into small pieces in advance, as well as to have soaked the chickpeas the day before and made it easier for them to soften when cooked.

Take a large pot and pour the chickpeas together with water, to boil them for approximately 45 minutes. Do the same with the potatoes in a different pot, until they soften enough.

Separately, in a food processor, place the previously chopped tomato and onion together with the garlic. Mix everything very well and then cook it in a pan with olive oil, seasoning to taste. Also add the oregano with the white wine and wait for everything to integrate.

In another pan you should cook the chorizo ​​together with the chopped bacon until they are ready. Then, in a large saucepan, add all the ingredients of the recipe and turn on the heat for 15 minutes, adjusting the flavor according to your taste. Wait for it to reduce a bit and everything is ready to eat.

6. Chickpeas with minced meat

This recipe for chickpea stew with vegetables has minced meat as its co-star, being rich in flavor and texture to satisfy demanding palates. However, the cooking time of the chickpeas must be taken care of, so that they are at the exact point.

Ingredients:

300 grams of cooked chickpeas

1 clove garlic

200 grams of minced meat

1 onion

2 tomatoes

1 bay leaf

1 pinch of thyme

1 pinch of salt

1 pinch of black pepper

 

Preparation

In any of the electric pots (if you click here, you have several purchase options) of your choice, pour the drained chickpeas together with clean water, bay leaves, salt and thyme, to cook everything for approximately 45 minutes. Meanwhile, blend the tomato and onion, to fry them with olive oil in a pan.

When the sauce is ready, add the meat along with the rest of the seasonings and cook it until it no longer looks pink. Add the chickpeas to the mixture keeping the fire on for another 15 minutes and you will be done.

7. Homemade Falafel

Among the fried chickpea recipes, falafel is one of the favorites and here you can even use a jar of chickpeas. This type of falafel with canned chickpeas is practically as tasty as if we use fresh legumes, since it will depend a lot on the seasoning.

Ingredients:

300 grams of chickpeas

120 grams of onion

1 clove garlic

1 bunch of coriander

1 bunch of fresh parsley

1 pinch of ground pepper

100 grams of chickpea flour

5 grams of chemical yeast

10 grams of ground cumin

Salt to taste

Preparation

Put the chickpeas to soak in water at least 24 hours before preparing the recipe, since they must be hydrated. When you’re ready to use them, drain them completely to get rid of excess water and place them directly into the blender jar.

In turn, also add the coriander, garlic, onion, cumin and ground parsley. Turn on the equipment and wait for everything to be completely shredded. Once finished, turn off the blender to add salt, pepper, chemical yeast and chickpea flour, taking care to reserve a little for later. Mix everything again until it is homogeneous and take it to the refrigerator for 30 minutes.

Now, take advantage of the leftover flour to spread it in a fountain and on your hands, with which you will form the falafel. Coat each falafel in the flour and they will be ready to fry, you just have to make sure to use very hot oil and that they are golden brown on both sides before serving.
