Pumpkin is an autumn vegetable with a very characteristic flavor that offers great gastronomic possibilities. It is a typical and healthy product that helps to lose weight in a healthy way and that can be present in all kinds of dishes, from desserts to creams and savory dishes. In this article, we review five recipes with pumpkin so you can enjoy its fantastic flavor.

Pumpkin dishes are typical in autumn, when the cold begins to arrive, this vegetable gives us energy and that peculiar aroma that fills the whole house. In addition, the calories in pumpkin are very few, just 28 kcal, and it provides great benefits for our eye and gastric health. It also prevents cholesterol and protects against hypertension and constipation.

This vegetable is very easy to cook and can be used to make a warm pumpkin stew to take away the cold or to make some of the traditional pumpkin desserts, as it has a sweet flavor that goes well with all kinds of ingredients.

Next, we are going to see some recipes with pumpkin, delicious, simple and quick to prepare.

Roasted pumpkin recipes are very versatile, as they can be prepared as a main course, but also as a dessert by adding a little sugar.

These are the ingredients for four people:

  • 1 pumpkin.
  • Salt.
  • Olive oil.
  • Ingredients to taste: 
    • 100 g of blue cheese.
    • 4 peeled walnuts.
    • 1 tablespoon of sugar or brown sugar.
    • 1 tablespoon of ground cinnamon.

We start by cutting the pumpkin into thin slices, in this sense, the part of the seeds cannot be used, so you can reserve it to make toasted pumpkin seeds. Next, peel the slices, as the skin is very tough and bitter.

In a griddle, put a few drops of oil and heat over high heat. When hot, lower the heat and add the slices. Each face should be roasted for about 15 minutes. Go turning until they start to brown, when they are ready you can add the ingredients.

If you want them salty, you should only salt one side. You can also put blue cheese, paprika, nuts or whatever you want. If you want them sweet, you can put sugar or cinnamon. Sweet roasted pumpkin is a typical dessert from the Mediterranean area and it tastes fantastic.

Light pumpkin and leek cream

Pumpkin cream recipes are very suitable for fall and winter, as they provide many benefits and cost very little to prepare.

The ingredients for four people are:

  • 2 leeks.
  • 1 pumpkin.
  • 2 onions.
  • Salt.
  • Flax seeds or grated cheese.

To start with this light pumpkin cream, we heat a pot with plenty of water and a little salt. While you wait for it to boil, peel and cut the pumpkin, onion and leeks. When the water starts to boil, add all the cut vegetables and let it simmer for 20 minutes.

Once cooked, put the vegetables and a little of their water in a container and with an electric mixer begin to grind them. The cream has to be very light, so you will have to beat well, rectifying with salt and, when it is ready, serve with a little flax seeds or grated cheese. It is a light cream, since it does not have potatoes and the calories of the pumpkin do not exceed 30 kcal.

If you want to cook pumpkin in a fun and innovative way, this dish is ideal as a healthy and light starter.

Its ingredients for two people are:

  • 200 g of pumpkin.
  • Peppers.
  • Salt.
  • Ground pepper.
  • 500 ml of sunflower oil for frying.

To start, with a potato peeler, peel the pumpkin and cut it into slices or very thin slices, for this you can use a mandolin. Add salt, paprika and pepper to your liking. Mix everything well with your hands.

In a pan, over medium heat, add a lot of oil and place the chips for about 3 minutes. When they are, remove them and place them on a plate with a kitchen paper that absorbs the remains of oil.

Baked pumpkin with cheese

This is a typical autumn dish, very tasty and it will not take you more than half an hour to make. 

Its ingredients for four people are:

  • 1 kg of pumpkin.
  • 100 grams of grated cheese.
  • 2 eggs.
  • 200 ml of milk.
  • Nutmeg.
  • Black pepper.
  • Salt.

Peel and cut the pumpkin into pieces and cook it for 5 minutes in a pot with plenty of water and salt. You can also steam the squash in the microwave to make it more tender and cook faster.

While it cooks, preheat the convection oven (if you click here, you have several purchase options) to 220 degrees. Once cooked, remove it and in a bowl add salt and pepper and also add the nutmeg. In another bowl, beat the eggs with the milk and pour the mixture over the pumpkin.

To finish, sprinkle the grated cheese on top until it is completely covered and put the dish in the oven and leave it until everything is golden. This cheesy baked butternut squash dish is perfect on its own, but also as a side to meats.

Pumpkin Fritters

These fritters are one of the many typical desserts from the Spanish Levante area that are made with this vegetable.

Its ingredients for six people are:

  • 300 g of pumpkin.
  • 400 g of wheat flour.
  • 25 g of fresh yeast.
  • 1 liter of oil.
  • 2 tablespoons of sugar.

Clean and peel the pumpkin, put it in a pot and cover it with water, to let it boil until it is very soft. If you cut it small it will soften sooner. Once cooked, mash it with a fork.

Dilute the fresh yeast using some of the pumpkin water. In this sense, the water has to be lukewarm, otherwise the yeast will not act. Add the flour and stir to mix until all the ingredients are combined. 

Go adding the pumpkin little by little in portions and stir until everything is well integrated. The dough should not be liquid, if it does, add more flour until it takes on body. It should not be hard either, but rather sticky.

Then add sugar and keep stirring. When the dough is uniform and sticks a little to your fingers, let it rest for an hour for the yeast to act. To do this, cover the container and leave it in a warm, draft-free place like a microwave or under a blanket.

When the dough has doubled in size, put oil in a pan and heat over high heat. Take small portions and create a kind of thread to make the fritters. Go introducing one by one in the oil and fry them. When they are golden, remove and put them on a plate, on an absorbent paper.

You have already seen that this is a very versatile vegetable in the kitchen, but it is also versatile outside of it.
