If you have an electric or gas oven but still don’t know how to make baked chicken, then this recipe is for you. It is one of the most popular, inexpensive dishes that can be shared with family and friends, all this without mentioning its high content of protein and other nutrients.
In general, a baked chicken recipe should include some vegetables that serve as carbohydrates to make a balanced dish. There are many versions with different ingredients, but in this case we want to prepare a roast chicken with potatoes and if you dare you can add the sweet touch of the sweet potato.
First of all, we must check the surface of the chicken well to remove any feathers that may have remained. If you have very small and difficult to remove feathers, you can use a kitchen torch. In addition, all the internal viscera must be removed, such as the lungs, the trachea and other parts that are not used, taking care that the chicken does not lose its shape, since we want to roast it whole because it will be part of the presentation on the table. Afterwards, it is necessary to wash well under the tap and dry the excess water.
Next, you need to choose a roasting pan that is oven safe so that you can season directly in it and then pop it in. You have to place the garlic, parsley, chilli pepper, oil and salt in the blender and beat to marinate the chicken with this mixture. Remember to leave a little to flavor the vegetables. You can add some black pepper directly from the grinder and some salt to taste. It is possible to marinate for a few minutes while you prepare the vegetables.
You just have to peel and cut the potatoes and sweet potatoes, to marinate and salt to taste. Subsequently, you must incorporate them into the chicken dish, with the breast side down and place it in the oven at a temperature of 170 to 200 °C for a period of 45 min. At this point you can remove the chicken to bathe it with the cognac and turn it over so that it is breast side up, then you have to put it back in the oven to continue cooking for another 45 minutes.
When the chicken has acquired a golden tone, you will know that it is ready, so you can turn off the oven and let it rest for 10 minutes. This baked chicken with potatoes can be served whole in the center of the table so that each guest can cut a portion.
