Ingredients:
- 350 ml of warm water
- 15 gr of fresh baker’s yeast
- 400 gr of wholemeal spelled flour
- 100 gr of wheat flour (or any for baked goods)
- 1 teaspoon dessert size salt
- Flour to use on the work surface
Spelled flour is a food with great nutritional value used to make wholemeal bread, pasta, cookies, biscuits and many more recipes; since it has more properties than those offered by traditional wheat flour.
It is a flour rich in fiber and minerals such as calcium, phosphorus, magnesium and potassium. Likewise, it has vitamin B1, B2, vitamin E, carbohydrates and proteins. For this reason, it is a healthy cereal, easy to digest and satiating.
Homemade bread with spelled flour provides a delicious flavor and aroma ; however, to make it fluffy and with a better texture, it is important to add a small part of wheat flour.
To begin the preparation of this recipe, you must first put the yeast in a bowl with warm water (it should never be hot) and stir until it dissolves completely.
On the other hand, proceed to mix the spelled flour with the salt and the wheat flour in a large bowl, then add the already diluted yeast. You must integrate the ingredients perfectly and create a dough.
Turn the dough onto a previously floured surface and knead by hand for a minimum of 15 minutes. Then, knead and stretch the preparation, continuously twisting until a smooth and elastic consistency is achieved. Once the desired appearance is achieved, proceed to form a ball, place it in a large enough bowl and brush with oil.
Next, cover the preparation with plastic wrap or a clean cloth and keep it in a place protected from the wind, for about an hour. The idea is to give the dough time to double in size . This process is called leavening.
When the dough has reached the expected volume, knead again to remove excess air inside and give it an elongated or round shape (according to your tastes).
Sprinkle flour on a tray and place the bread on it. Don’t forget to make diagonal cuts with a knife. Then proceed to cover again with a cloth for an hour away from drafts.
While the second proofing time is taking place, preheat the oven to 250ºC. A trick to get a crispy crust is to place a bowl of water at the base of the oven to generate steam.
Once the bread has reached its volume, put it in the oven, lower the heat to 200ºC and bake for 35 minutes. You’ll know the bread is done when it sounds hollow when tapped on the bottom. You could also easily get spelled bread in a bread maker.
