Easy homemade yogurt cake

Ingredients:
- 1 natural yogurt (125 ml)
- 3 glasses of wheat flour for pastry (250 g)
- 1 glass of sunflower oil or ½ glass of olive oil (125 ml)
- 2 glasses of sugar (240 g)
- Vanilla essence (15ml)
- Eggs (4 units)
- Baking powder or yeast (15 g)
Other ingredients:
- 1 lemon or 1 orange (optional)
- Powdered sugar for topping if desired
The recipe for this small healthy sponge cake is designed for about 4 people. Unlike the preparation of a yogurt cake, in this recipe the yogurt glass will be used as a measure for the other ingredients. Therefore, do not throw it away at any time and, when you start, pour the yogurt into a container so that your glass is free for the rest.
Once you have the ingredients for the cake ready, you can start by preheating the oven to 180°. While you wait, take a mold about 22 centimeters in diameter and spread it with oil or butter. In this way, the final result will be much easier to unmold.
Find a bowl and add the eggs along with the sugar. Start beating for about 2-3 minutes so that the mixture foams and turns whitish. If you don’t know how to make a sponge cake, you need to know that this is the key to achieving it.
Add the yogurt to the mixture and continue beating. Remember that using electric wands is recommended, but manual wands will work just as well.
If you decided to add lemon or orange, this is the moment. Wash the fruit and grate, adding to the dough to mix. This will give the cake flavor.
To continue, add half of the flour and the yeast to the mixture. Although there are people who prefer not to sift, this is recommended, as it prevents the mixture from being lumpy.
Slowly pour the glass of oil, beating well so that it is integrated into the mixture. Then add the rest of the flour and continue beating.
When you get to this step, you can now pour the mixture into the mold. By this time, the convection oven should have reached its optimal temperature, so you should put the preparation in and bake for 30 minutes.
Remember to monitor the cake after 30 minutes, in case your oven is not very powerful and needs more cooking time. To check if it’s ready, prick the center with a toothpick to see if it comes out clean.
Remove the mold from the oven and wait for the cake to cool down before unmolding it. When you do it, you can sprinkle the icing sugar or eat it directly if you prefer it that way. It’s time to enjoy a delicious dessert.
