Mushrooms in sauce are very popular mushrooms and are ideal for maximizing the flavor of a wide variety of dishes. For this reason, they can be combined with chicken, fish, meat, potatoes, pasta, vegetables or eggs. In addition, they contain vitamin C, D, B6, phosphorus, selenium, iron, magnesium, folic acid and only provide 20 calories per 100 g.
Not all of us know how to make mushroom sauce with cream. Therefore, this simple recipe is intended for beginner cooks and also for lovers of cooking. It only requires a few easy-to-find ingredients, including butter.
Although other preparations prefer to use extra virgin olive oil, the truth is that butter enhances and complements the essence of the mushroom. Likewise, a recommendation to obtain more flavor in this mushroom sauce is to preferably use portobello mushrooms instead of the white variety that you get in any store or supermarket.
To start the preparation of this recipe, you must first wash the mushrooms. You should not leave them soaking , as they lose texture and aroma; so they are only quickly submerged in water, and with a clean brush you remove the grit or any dirt.
Not the entire body of the mushroom can be used, so you must remove the 2 cm from its base (the part that is in contact with the ground) and then proceed to cut them all into thin slices.
Next, you must chop the onion into small squares and also the garlic clove. Next, place a pan over high heat on a stove or induction hob and melt the butter, preventing it from burning. Now, add the onion, minced garlic and lower to medium heat, cooking for a minute or until golden brown.
At this point, add the mushrooms to the skillet. The mushrooms will soak up the butter, but you don’t need to add more; in a few moments they will begin to sweat, release their juices and change color. This is when you will have to incorporate the cream and increase the temperature.
Once the preparation starts to boil, you only have to cook for a minute without stopping stirring. Turn off the heat, remove the sauce and proceed to season. For this purpose, stir to integrate all the ingredients. Now, let it rest for about 5 minutes to give the sauce time to thicken and enhance both its flavor and aroma.
Another delicious alternative to thicken the sauce is to let it rest, then proceed to reserve some mushrooms and the rest of the preparation take it to a blender. Blend or whisk until you get a mixture with a creamy consistency.
When serving, it is advisable to use a sauce boat adding the reserved mushrooms. You could also serve directly on the plate over meat or pasta, placing the mushroom slices on top of the food.
