Stewed rabbit with vegetables

Ingredients:
- 1 whole rabbit
- 200 g of crushed tomato
- 2 cloves of garlic
- 1 red bell pepper
- 1 onion
- 2 carrots
- 1 teaspoon sweet paprika
- 1 splash of white wine
- Olive oil
- Water
- Salt and pepper to taste

- 1 tablespoon of flour
Although we like to eat it very much, not all of us know how to cook rabbit, for this reason, it is good to mention the importance of cleaning and cutting. First of all, you have to remove the head, which is usually discarded, and then remove the liver and kidneys, as well as other viscera and fat that it has in the internal part, so that we can open and cut right in the center of the backbone to obtain two halves. Next, you have to separate the shoulder and the thigh of each piece to proceed to cut the trunk into slices. Both the thighs and the shoulders can be divided where the joint is, so that they are left in smaller pieces, taking care not to splinter the bone.
It is time to season all the pieces, trying to distribute the salt and pepper along all the edges of the pieces. Then, in a high pot over high heat, we must place a little olive oil, to introduce all the pieces of the rabbit, with the aim of sealing for 2 minutes or until they are golden on the outside and raw on the inside. This step is very important so that the meat does not lose its juiciness inside when making the rabbit stew.
At this point, we must lower the level of the fire and remove the rabbit to place it in another container. In this way, we can take advantage of the rabbit juice to introduce the garlic chopped into small pieces, the carrot into thin slices, the pepper and the onion into the same pot. Thus, it is possible to season the vegetables and sauté for 5 minutes, without stopping moving. Now, we must add the chopped sweet paprika and the crushed tomato, stirring with the rest of the ingredients to cook for a period of 10 minutes.
To give the rabbit stew a special touch, you can add a splash of white wine and continue cooking until the liquor is reduced. This is where it is appropriate to add the tablespoon of flour if we want a thicker sauce. If this is the case, mix well and cook over low heat for another 3 minutes.
It only remains to add the rabbit and cover with water to cook for about 40 minutes or until the rabbit and vegetables have a soft consistency. Before serving, it is convenient to taste the sauce to rectify the salt if necessary. Finally, we must mention that this is the preparation of the rabbit on an induction, gas or ceramic hob, since it is different in the oven.
