Ingredients:
- 4 eggplants
- Olive oil
- Salt
- black pepper (optional)
Filling Ingredients:
- 4 cans of tuna in oil
- 100 gr of fried tomato or tomato sauce
- 1 large onion
- 1 red bell pepper
- 3 garlic cloves
- 1/4 teaspoon sweet paprika
- 1/4 teaspoon cumin powder
Other ingredients:
- 100 gr of grated cheese for gratin (mozzarella, emmental or gruyere)
The first step for you to prepare some delicious aubergines stuffed with tuna is to wash them and cut them in half, from the base of the stem to its apex. In this way, its meat will be exposed and it will make it easier for you to make transversal cuts on it.
Next, place the aubergines on a tray suitable for the oven and season them with a mixture of olive oil, salt, black pepper or any other spice of your choice to enhance their flavor. Put them in the electric oven and set them to cook at 180ºC for 40 minutes. However, you should be aware of removing them once their meat is tender and they brown superficially.
While the aubergines are cooking, you can prepare the filling. Wash and finely chop the onion, bell pepper and garlic cloves. Then pour them into a previously heated frying pan, fry for about 5 minutes and reserve.
When the aubergines are ready, remove the pulp with the help of a spoon, being careful not to tear the skin, and add it to the sauce. After a few minutes add the teaspoon of sweet paprika, cumin powder, fried tomato or tomato sauce and the shredded tuna. Stir everything well and cook for 5 more minutes.
It is time to fill the eggplant skins. But, not before preheating the oven to 180ºC. Once ready, cover them with the cheese and place the tray in the oven. The final cooking time will be given by the gratin point of your preference.
Serve and enjoy this dish that satisfies well on its own. But, if you prefer to accompany it, you could opt for either a vegetable-based side dish or a portion of potatoes in any of its presentations. Both options would suit you.
An advantage of this recipe is that you not only require electric ovens for its preparation, but you can also cook aubergines in the microwave with tuna or any other filling, considerably reducing its cooking time. Interesting fact for when you want to enjoy a good dish, but you have little time to prepare it.
