Ingredients:

  • 400 grams of rice

Paella is a typical recipe of Spanish cuisine that has conquered kitchens internationally. There are many paella recipes with different flavors and the common denominator in this dish is rice; there is paella with meat, fish, seafood, etc. For this reason, when it comes to preparing a Valencian seafood paella or rice with seafood, it is essential to preserve its essence of sea food and not mix these flavors with other meats.

It is also important that the ingredients or raw material offer freshness; since this way the flavors adhere with greater intensity. Some adventurers prefer to fish for shellfish themselves, so to capture those unforgettable moments they carry game cameras with them.

On the other hand, the paella rice recommended for this dish should be the bomba, bay or senia type; so you should avoid long rice. Likewise, it is advisable to use a paella pan, preferably steel, for the preparation, since it transmits heat better.

First of all, you should carefully wash the shellfish: mussels, squid and prawns. To do this, leave them in cold water and with a knife or aluminum sponge, remove the impurities from their shells and also cut their beards with scissors. Once clean and chopped, reserve the food.

Start chopping the sauce ingredients into very small pieces: garlic, onion and peppers. Then, place a large paella pan with oil on the gas hob, add the shrimp and prawns and sauté over high heat. You can put them to one side of the pan and add more oil to fry the already chopped vegetables. Let everything cook for 4 minutes and add the garlic; stir constantly and then integrate the tomato. Cook a few more minutes.

Now add a saucepan of fish broth to the preparation and add the mussels, the sweet pepper and the saffron; keep stirring. Next, add the salt and the rice and mix the paella ingredients so that the rice absorbs all the flavour.

Finish pouring all the fish broth, previously heated, correct the salt if necessary and add the natural colouring. Let the preparation cook for approximately 18 min or until you verify that the rice is ready. Before removing from the heat, you can put the prawns on top of the rice and let it cook for 5 more minutes.
