Broccoli and cheddar cream

Ingredients: 

  • 1 head of broccoli
  • 1 large white onion
  • 1 large potato without skin
  • 4 tablespoons of butter
  • 4 cups hot chicken or vegetable broth
  • minced leek
  • 1 ½ cups grated cheddar cheese
  • ½ cup of heavy cream
  • Salt and pepper to taste

Among the recipes with broccoli, this cream with cheddar stands out, as it allows you to take advantage of the benefits of the vegetable and the intense flavor of the matured cheese. But before starting the preparation, it is important to clean the broccoli well, since due to the way it is grown, it is a vegetable that can bring some dirt, soil, insects and in some cases worms. The first thing is to separate the small trees that make up the broccoli, since it is easier to clean this way.

Next, you must place enough water in a bowl, so that the broccoli florets are completely submerged. For every liter of water, add a tablespoon of white vinegar and leave it to act for a period of 10 minutes. The degree of acidity eliminates viruses and bacteria, but does not harm the vegetables. To avoid the strong taste, you must discard the water and place a new one without vinegar, to let it rest for 5 more minutes. Then, you just have to remove the water and drain the broccoli well. This procedure works for pureeing broccoli or any other recipe. 

Once you have the raw broccoli clean, you can start making the cream. First of all, it is necessary to put the butter in a saucepan over low heat until it melts, to add the chopped onion and fry for 5 minutes or until it acquires a more transparent tone. Afterwards, it is possible to add the chopped potato and the chicken broth, to raise the heat to medium level and let it cook for another 5 minutes. 

It is time to add the broccoli florets in the broth, to cook them over low heat for 5 minutes. At this point it is important to season and taste the preparation to rectify if necessary. Then, we can turn off the heat and take all this to a Braun blender or any other brand. 

When the ingredients are properly integrated and form a smooth cream, it is necessary to pour everything back into the pot over low heat. Thus, it only remains to add the cream of milk and the grated cheddar cheese, to cook for 5 minutes or until it completely melts, which indicates that our cream of broccoli is ready.
